This species is present throughout the Mediterranean Sea, in the Black Sea and along the Atlantic coasts from Senegal to the Gulf of Biscay. Generally, the croaker lives on the sandy seabed, but being a strongly euryhaline species, its presence is usually found also within the coastal lagoons.
Although controlled reproduction has been developed and a good number of breeding experiences can be counted, the croaker cannot yet be considered a consolidated species for Mediterranean aquaculture.

Purchase and conservation

Fishing seasonality: especially in the spring and summer months.
At present, it is certainly not possible to speak of a market for this species as the reduced productions, concentrated in very few plants, make it a niche product for very few connoisseurs who appreciate its quality of meat.

Use in the kitchen

Ideal cooked on the grill, in the oven and boiled with a light dressing of extra virgin olive oil and a little salt.

Peel the potatoes and slice them finely, cut the fillets of ombrina into 4 slices. On a sheet of parchment paper prepare a layer of potatoes, place a slice of fish on top, cover it with another layer of potatoes, add salt and pepper. Then with a scoop, lift the fish covered with potatoes and brown it for 4 minutes on each side in a pan with extra virgin olive oil. Coat the other slices of ombrina in the same way and cook them in a pan. Serve them in individual dishes on a veil of hot tomato garnished with fresh basil leaves.
